1 cup flour
1 tsp. salt
1/2 tsp. black pepper
1/2 tsp. cayenne pepper
1 tbsp. butter
1 tbsp. olive oil
1 pound chicken tenderloins
cajun seasoning
Mix flour, salt, black pepper and cayenne pepper in shallow dish. Heat butter in large non-stick skillet on med-high until melted and fragrant. Add olive oil. Season chicken with salt, pepper and cajun seasoning and coat with flour. Saute on med-high until crispy and golden, about 4-5 minutes per side (longer for thicker pieces).
I call this "no leftovers" because my husband and his dad and brother always fight over who gets the last one when we're all together. Soon the little one will be joining in! (She's bigger now, but I always liked this picture.)
